Cour de Loges is a fantastic hotel in the heart of Lyon, the culinary capital of France

Our friend and new collaborator James Shillinglaw, Editor and Co-Founder of travel industry trade newsletter Insider Travel Report, recently went to Lyon, undisputed food capital of France (well, to be honest, it’s probably disputed by just about every city, town and small village in France, but somebody has to be declarative about this…) 

 

Lyon is the wellspring from which the legendary, almost mythical, chef Paul Bocuse came from and where he more or less invented modern French cuisine. He was known colloquially as the Pope of Gastronomy and the biennial Bocuse d’Or, the World Cup for chefs, is named after him. But he’s not the only one! Other chef colossuses from there, who also bestrode the earth, include Mathieu Viannay, Eugénie Brazier (Bocuse’s teacher!) and New York City’s favorite adopted son from the kitchen, Daniel Boulud

 

In this video James interviews Laurent Grima, Director of Operations at the hotel Cour de Loges, a recently renovated and modernized Renaissance-era complex of buildings, right in the heart of the old city. And keeping pace with the culinary prestige of Lyon, the hotel has an eponymous, gastronomic masterpiece of a restaurant, under chef Anthony Bonnet, located in a Florentine courtyard, under a high glass ceiling.
